Chicken Pospas (Recipe)

Description:

One of the good ole remedies when one gets sick with fever or colds.

It is the comfort food /merienda chicken pospas (or arroz caldo as its called) to the rescue of the invalid.  I got this from the old high school recipe index card.

Ingredients:

1 piece breast chicken or other parts (cut into pieces) (fleshy part) (flaked)
onion (sliced/minced) – leeks or bulbs
salt to taste
1 cup rice
3 cup water
garlic (minced)
ginger (optional)
toyo (soy sauce)

Directions:

1. Saute the onion until brown. Then fry the chicken.

2. Cook the rice with 3 cups water as in the usual porridge.

3. Tear the chicken into small strips then drop into the boiling rice. Season with salt to your taste and serve hot.

Description:

The following is from a recipe I found in my the pile of  high school recipe index cards – cooking sessions in the subject ‘Practical Arts’.

I do love ube, but then am a typical Filipina.

Ingredients:

1 kilo ube (purple yam)

15 to 20 pieces ripe bananas

oil for deep fry

Directions:

1. Pare the ube and shred it thoroughly. Slice thickly the ripe bananas.

2. Coat a slice of banana with the grated ube and deep-fry. Before placing another set of fritters, remove completely the cooked ones.

3. Place it in a colander for drainage of oil and serve hot.

Of Scallops, Sales and Seafoods (album)

a hot, hot day

Jing and Harry were able to make it. Benjie too although she was late and said she would catch up. I had texted some college friends to see if we could get together for lunch this day as I did kind of miss eating baked tahong and scallops. Seafoods are not something I can usually indulge in while in Manila, so I was happy to be eating something I liked and which wasn’t horribly expensive to make me lose my appetite.

Rosemarie had to wait for her hubby to drive her to the place, Erwin was in the town of Alegria (90 kms or more away), AnaFe was in Bohol, while the others could not be contacted in time. That meant I could have most of the seafoods to myself *evil glint in eye*….I mean…eherm..too bad for them as I didn’t really say outright I would treat them (although that was my intention..sneaky eh?)

It is a good thing Harry came over, we found out that he would be leaving for Dubai and staying with Rosemarie’s husband’s cousin while working there…i.e. he won’t be able to treat us to his birthday either this April. Anafe would be coming over to Manila on her birthday this April and we may get together if all goes well.

It was super hot waiting for them…and I found out that parking in Cebu has gotten worse. Before, you could just squish your car on these side streets and walk away, but now you pay the CITOM even if its a weekend and then you are expected to give something to the “bantay”. *sigh* Oh well, I suppose while I can afford it, I might as well share what coins I have in my bag.

Since I had no breakfast, I gobbled double helpings of the viands BEFORE I could get a picture of them. I don’t think you’d want a picture of a plate of rice? which was the only thing left, plus pieces of the tuna and some baked scallops…as well as shreds of the shrimps 🙂

When Benjie came, we excitedly talked about the trips we hope to take. Jing was enthusiastic at the thought of going to Singapore for a more well-planned reunion. SInce Rolando was there, I’m sure he could help us out in case that would push through. Benjie and I were putting our heads together since the plan for our vacation this year was for me to meet up with her in Japan since she would be going there this April-May. Wheee! I really hope to be able to afford it..I don’t care if I have to diet and scrimp afterwards on food once back in the Philippines. Unfortunately doing so, would require some strategic project management thinking and planning…from visa to ticket to schedule to my work being uninterrupted. Its not as simple as it seems. Grrrr.

Benjie accompanied me to my house after we all split up since the couple had to go to Danao for an overnight trip. My parents were happy to see her as she has been a friend of the family for some time and most of her gifts of brownies to me, end up in my dad’s stomach (blame his sweet tooth). “I-palabi ko na lang” (I give priority to him).

Afterwards, we both split for Gaisano Country Mall where she had a meeting and I spent the time shopping around while waiting for her. They had lots of sales on almost all the items. How difficult is it to get good cargo pants for women anyway? GCM has good finds if you are just a bit patient..and I was able to buy a couple of Levis on sale..pants were a zero though. A quick trip to the household area also had me buying good quality pitchers and cups, and weirdly, I also saw some awfully expensive owls (pictures somewhere on this album)…which, were not on sale (too bad Sir B!)

For dinner, we were discussing with great intensity between Alavar’s Seafoods (love their crabs and the heavenly sauce) and Golden Cowrie (it became well known for baked tahong when it was first established). We cruised around the once sleepy area near the Lahug airport and were agreeably suprised the whole street as being lined with restaurants…Wow, this is one thing I miss about Cebu..good, affordable food. Next time, I promised myself, it will be Alavar’s and Chika-an sa Cebu! (aba! naka-plot pa yan sa Outlook)

LT 4 Lunch – March 2008 (album)

Where: Italianni’s restaurant Greenbelt 3
When: March 10, 2008 (Monday), 12 noon
Who: Jobet, Shan, Prof Leny and Cat

I passed outside Shan’s office last week on my way to Kodak head office. Suddenly I had an idea, but I could not see Shan that day…and so with some well-placed text messages *subtle hint, hint* to both Jobet and Shan, the next thing I got confirmed was that Jobet did arrange a lunch get-together with the LT 4 members (those of us here anyway) with our learning team mentor – Professor Leny Panganiban.

Venue was Italianni’s at GB3 since it was near to AIM all-around. A good thing this pushed through as we didn’t get to greet Prof Leny (exception: Jobet) on her birthday last February 29.

Jobet was already sitting by the reserved table. He looked the picture of a prosperous lawyer who is still pretty busy inspite of a thriving firm (or maybe its because of that). After an exchange of teasing remarks, we stopped as Prof. Leny arrived after crossing over from AIM.

Kisses and hugs were exchanged. After a few more minutes, Shan strolled by, and we all exclaimed when we saw him through the glass window as to how he had lost weight. Wow! his role as a new father must be more stressful than I had thought 

Lunch, consisting of pizza margherita, breaded fish and vegetables, pasta with clams – was good and filling. But the meal wasn’t as juicily delicious as the conversation and topics which accompanied it. 

Conversation was, as could be expected – AIM-related – professors before and now, court cases here and there, a case study or two, shared history and updates on the classmates we wonder about. “Irony” is what I can think of when I reflect on the subjects tackled.

Unfortunately or fortunately (it depends – our standard answer), Shan and Prof Leny were watching their food intake, so Jobet and I finished up with tiramisu while they had coffee. At 2 p.m. we went our separate ways as life, work and Mondays still had to go on.

Sorry for the short description on how the lunch went, it is pretty late and I’ve digested the lunch already by the time I post this..*grin*

Looking back on it, it really WAS liberating having gone through the AIM experience and getting to know and share memories with the our professors and classmates – not least of all doing most of these activities with one’s own learning team {although I find the old term of can (?) group more hilarious and fitting}. I was lucky to be in the team which lasted the longest in regular meetings for the case studies.

Disperas and on Daddy’s birthday (album)

Nov 22 – 23, 2007. Ciudad sa Sugbu, Nasod sa Pilipinas.

Arrived in Mactan Airport at around 9 pm. Of course – hungry mood! Since I was now the driver because it was night (my dad can still drive around at his age as long as its daylight and at 82 thats not too shabby of dear old pappy)… I thought of passing by Banilad Town Center as it may have a new resto.

On a whim, I just picked out a resto named “Spice Fusion”. Even though it was almost closing time, they let us in and a couple of mouthwatering dishes later, I almost blessed the guard with a hug and a pinch on his cheeks in gratitude.

I was so hungry and the food was devoured so quickly that I had no time to take a picture of it (I did the quickest devouring). But it was good. I say that with enough confidence because my dad is the pickiest eater in the world! I don’t know if his tongue or taste buds have been ruined due to all the smoking and candies he chews on, but its a small miracle by itself if we partake of a meal and he doesn’t have one negative comment about it. I think he was a food critic in his previous life…that or its a side-effect of age creeping up on him 🙂

This time though he was happy with what I ordered and I daringly put more and more snippets of it on his plate after he didn’t comment and just munched on his rice and prawn meat. Thank goodness!….I also told him and my mom that they resembled “taw-taw sa humayan” (scarecrows on ricefields or literally “person-person on a ricefield”) since they were appallingly thin.

My mom loved the mahi-mahi they had as it was also quite tender, with no fishy smell or taste. The sauces they paired it with were spicy – but not too hot to bother my parents and not too mild to make me complain about the lack of heat.

Except for the prawns which I set aside for my dad as he rarely eats much nowadays… all the other dishes were shared with my mom, our helper Rosemarie and moi. I finally topped it off with some sticky rice and mangoes for dessert..and all of us were happy enough to go home and visit dreamland.

The next day, I told my dad I’d treat him to a birthday lunch (he is getting more thrifty as time goes by and refused to have a party)…..this time we went to Cafe Laguna at Ayala – the outdoor branch.

The first branch for this resto was located near the Lahug military camp and was well known for its lengua estofado. Now this is one dish I associate with Cafe Laguna, along with some merienda I used to order e.g. dugo-dugo and puto, sikwate (tsokolate-eh) and bibingka, guinomis, tokwa’t-baboy….to name a few.

We arrived at the resto after the lunch hour and so were able to sit comfortably. With the Ayala Cebu renovation going on, it was disappointing to have one side of the resto facing a blank wall, but the food more than made up for the lack of beautifully balanced scenery. Well, I could have gone to the other branch inside the mall itself but its nice to look out into the sunshine and dream of days gone by.

I ordered the lengua estofado (a bit different from our other favorite lengua which comes from Beehive on Ramos St. in Cebu and usually paired with a lovely crusty warm french bread). I added crispy fried pork belly, and the usual fish dish for my mom – this time I chose a delicately flavoured lapu-lapu escabeche…ah! the memories of this dish when cooked by my mom and maternal grandma when she was still alive (God Bless her soul) made me hanker for it once more.

Afterwards, we dropped by Ayala Mall to see the new grocery of Rustan’s. They had moved out from their original building which was located beside my alma mater, St. Theresa’s College (Mango Ave. or known also as Gen. Maxilom Ave., Cebu City) . They have one more outlet near the Convergys office in Guadalupe if I am not mistaken.

Ayala Cebu also made an extension of one side of its building…and I laughed out loud when aside from seeing the other newly opened branded stores missing in Cebu before…I also saw a lot of people crowding inside the Crocs store. I remembered Ms G. but who could buy any pair of shoes at all when we customers slithered like irritated fish in a crowded aquarium-tank in the outlet?

After flitting from one shop to another and checking the goods and on-sale items, my parents refused merienda or early dinner (to me and my stomach’s disappointment) and we made off with the groceries we had bought, then went home. And that was how my dad’s official day for turning 82 years of age went.

Not too worry though as I had asked a favor from one of my college buddies to see if we could visit their resthouse by the sea in Alcoy, a town about 91 km from Cebu City going towards the southern part of the island.

My last visit has probably been in the last century (meaning late 1990s!!). For good measure, I asked Benjie and her kids (who were suffering from piskat or sore eyes) to come along so we could start on a mini-reunion (see Patio Isabel reunion on who Benjie and my other college buddies are).

Of course, I begged her to bring some lechon and meat for grilling too as I certainly missed the smells of this kind of food while in Manila. That was to happen the next day. The promise of puso (hanging rice) and smell of grilled meat was what my dreams were made of that night.

Sept 15, 2007 (Sat): Kimono Ken eaters.

Despite news of a “bagyo’ the tv ads basics seminar in Ortigas pushed through. Lunch at “Kimono Ken” at Shangri-La Crossings proceeded. Sayang walang nakaisip kumuha ng video.

Sept 20, 2007 (Thurs): Out-of-the-blue HOSL Reunion.

A surprise call from Maita, whose only boy is my first ever godson (all the others were girls). She, Idyl and Willie who were some of my officemates from Sara Lee Direct Selling were in town for a training. After checking that I had no issues with my work, I said bye to my boss who was online and met them at “Starbucks” Glorietta. It was hiliarious how they tried to find where GB3 was..since I told them I would be there…I forgot to tell them Greenbelt..akala nila store..hahaha..

Afterwards we proceeded to Italianni’s where we all had an after-dinner snacks. Reminiscing about how long its been since we first worked for Sara Lee..it was a good way to find out where the others in our batch are now scattered to.

Sept 21, 2007 (Fri): Dinner with Anil and other MM2005 peeps.

Anil, who was in town for a series of seminars in Ortigas…came all the way from India. So Jobet arranged for those of us who were in Manila to be meeting Anil for dinner. First choice was “Oody’s” at GB3…but we didn’t know it was under renovation. Well, no matter…there are other restaurants..and we ended up in “Thousand Cranes Shabu Shabu” on the 2nd floor of GB3. Aside from finding out one of our eligible bachelors (ehem) was getting married…I also found out the other classmate would be a father again.

Sept 22, 2007 (Sat): Belated Bday celebration

Friday, Sept 21 was Maita’s birthday. Unfortunately by the time they contacted me that night, after the reunion dinner with Anil…my headache which I tried to hold at bay during dinner wouldn’t go away. So we agreed to meet for lunch today. The others had to leave for Visayas and Mindanao so Maita and I ended up eating lunch at “Mangan’s” in Glorrieta. Unfortunately since they had not planned on seeing me…they were not able to extend their trip. I hope next time we can go to Enchanted Kingdom..

Since Multiply is closing to us poor folks who have been using it for our blogs and photos, I’ve grabbed what I can before December 1.

Here is the photo album and thoughts of Kaiyen of my visit to here last 2007:

I know her face. We walked on the same corridors for four years in highschool but were never in a class together. I don’t think we ever had a conversation until Multiply. Fast forward twenty-one years later, here we are!

It’s so much fun to re-connect (or connect?). We finally get to speak on the phone one fine Tuesday morning and made arrangements to meet for dinner in the “City” the next day. We played catch up and talked and ate and talked some more. Then I realized I don’t know much about Cat, still it felt like I’ve known her for years! Next thing I know (after a rough wrestling and arm-twisting involved), she agreed to stay the night at my place but only if I promise to show her a piece of the Sonoma wine country. Tough deal. I called in sick the next day.

We did try to have an early start that Thursday morning of 5.17.07 but we ended up yapping up a storm and flipping through our high school yearbook instead. It was nice to look back (I am not very fond of those years actually – it almost seems like a different lifetime) and visit that place in time with somebody who was also there. After a big Vietnamese brunch, we headed on out for dessert drinks in Korbel for some complimentary champagne tastings. Mmmm Muscato! Then burned off some cals on a mile walk to meet a 1400-year-old, 300-something-foot-tall, “Gentle Giant” in Armstrong Redwoods SP in Guerneville. After our commune with nature, we cruised downtown and historic railroad square in Santa Rosa and dropped by to say a “quick hellow!” to the Peanuts Gang. Then it was time to go home…

Sanfo Day 6: Sta. Rosa -> Kaiyen (5.17.07)

Sta. Rosa, 17th May 2007 – An impromptu overnight stay at Kaiyen’s house off the next day with some reminiscing over the old STC yearbook. We took some time talking a little bit about those years – which was funny, because although we shared common one-time or another classmates, we never were in the same section together. I remember her though because thumbing through the yearbook years before, when I first received it after graduation, I looked through each of the pictures, and I made note of her, since she was listed as coming from San Fernando, Cebu…a “lungsod” prior to Sibonga, Cebu, which is where my dear mother comes from.

Talking as girls are wont to do, we missed breakfast and coffee, so Kaiyen hauled me to a great Vietnamese restaurant…where we gobbled up the pork chop, rice and soup (it made me nostalgic for Filipino food)…I cannot possibly remember the Vietnamese names…yummy brunch!

Then, a visit to Korbel where we happily partook of the free champagne tasting. We missed the garden tour by a couple of minutes since we took some pictures when we first arrived at the winery, but the nice guy who poured us the wines was friendly enough to talk about the selection and even looked at our identification cards (ahay, the price of looking young and cute like a juvenile teenagers…tee-hee).

After getting sloshed over 4 glasses and more pictures – I even got a feature in Kaiyen’s photo album – she drove us off into the forest – and not an ordinary forest at that.

These were populated by giant, fat redwoods…and aside from noting the tallest, the oldest and even unusual ones, I was sorry to leave this park behind without Kaiyen getting her 4-leaf clover.

A quick sneak back into her house to check if her hubby was around since they had to sync on their plans, then we managed to drop by the Charles M. Shultz museum where my fave beagle frolicked. There wasn’t enough time though, you would need at least one and a half-hours to go thru it and read the comics…but I contented myself with snapshots with the famous gang. A tour of the downtown afterwards convinced me that I really should come back here and book myself in a hotel if ever I got the chance again…it looked like a charming little town which had the conveniences of a city but the warmth and friendliness as well as cute little stores with antiques and other baubles to warm the cockles of my heart.

I couldn’t survive going back to San Franciso without eating, so Kaiyen took me to “In-N-Out” burger…and a good thing too because my stomach was sticking to my spine by that time…I was told that I shouldn’t leave the state without tasting this burger, and I must say, they were right..the burgers and fries tasted really different from what I had expected after eating a zillion MacDos and Jollibees and Burker King burgers. They were supposed to be authentically fresh (I had visions of the cows being slaughtered at the back of the burger joint)…

Then it was time for me to go back…and before I crossed the bridge back into dear old Sanfo, we stopped to get a few more pics on the other side. It was getting cold at that time, and although we shivered, we still managed to smile and gave a good shot at looking cool without showing we were cold.

Kaiyen had to call in sick to accompany me that day and she did more than I expected her to in keeping me company and touring me around. More than going around Sta. Rosa and getting to visit the sites, the most important take-away for me was discovering Kaiyen, and talking to her has given me a more complete picture of her than that of seeing her pictures and reading her posts here on Multiply.

Hasta la vista Kaiyen…won’t be saying goodbye because surely, surely..we will meet again..if only to share more food and adventures…*grin*

Saisaki Jack in QC (Photo Album)

(apologies to Samurai Jack and G Tartakovsky..and of course to Jack too but I couldn’t resist)..wicked me!

It started on the last week of May when Hugzone and his better half Guia gave me a dinner treat at “Sugi’ in Greenbelt 2. Although Ms. G was disapointed at the lack of the parsley tempura, we abandoned our diets (cept for Ms G) and I found out that Jack was here and they would be having dinner with him on Friday itself. Generously, they asked me to come over and arranged for me to have a ride to Quezon City.

Telling my team lead I had to go on an out of town trip (anything beyond Makati City is out of town for me) and that I would miss the phone conference that night, I worked feverishly through my emails and tried my best to get thru the afternoon’s pile of work. Lunch with officemates at Teriyaki Boy Paseo Center delayed me a little bit, but who cares when there was something to look forward to that night?

I whizzed to the resto along with Faith, another fellow Multiply-er..a charming young lady who had a wicked sense of humor and pouty lips which reminded me of Angelina Jolie…I met her for the first time that night and I was happy to share the ride with her and get to know her a little bit in the process…thanks for the “vintage” line Faith!, now I can use it whenever the age topic pops up…

I was happily munching along with the others in Saisaki and having fun ordering a fruit juice because there was a free fish stuffed toy. You know how Pinoys are…bahala na ano yung drink, basta free yung stuffed toy. Even Jack himself was determined to get a blue one!

I met their other elementary classmates like Melissa and Cora (I can’t remember their full names if these are correct or even all of their names..again blame the grey cells). It was sweet listening to them reminisce about their years…and even comparing their faces with the old photo of their section (turns out Hugzone was not part of it). Yung nga lang, yung conversation turned to health at times..hehehe…

Ms G came in late, but she brought along the new comics idea/storyboard/prototype they were working on..so I had some kilig time too..(oi, I read Mills and Boone and Harlequin during my younger years, where do you think I got all those good English phrases like “telly”, “fortnight” and “incestuous relationships”? *British accent*)

After we won the contest of “which Saisaki customer would be the last to leave the resto”, Jack said that it was his despidida that coming Monday…if ever mapadpad kami sa QC, punta daw kami sa kanila..ah..the time was too short..but at least, I got to converse with Jack.

Thanks to Sir B for starting the ball rolling…I managed to meet in person first Choie, then Faith, then Jack and by their very presence, they have already enriched my povs (point of views)…now what are the odds of that happening all in less than a month’s time?

Till next reunion, kainan, gimikan…I hope other people will also be as blessed as I am to make new friends as likeable as these people have turned out to be.
